Cajun Chicken Alfredo with Zoodles

Ingredients:

  • 1 lb Boneless, Skinless Chicken Breasts

  • Cajun Seasoning

  • 1/2 cup Butter

  • 8-oz Cream Cheese

  • 2 tsp Garlic Powder

  • 2 cups Milk

  • 3/4 cup Parmesan Cheese

  • 1/8 tsp Black Pepper

  • 1 tsp Olive Oil

  • 2 squash for noodles

  • 2 zucchini for noodles

Preparation notes:

Chicken directions:

Line a pan with foil and spray with cooking spray. Place chicken breasts in a pan and sprinkle both sides with Cajun seasoning. Bake at 350 for 45 minutes. Let cool, cut into bite-sized pieces.

Sauce directions:

In a large skillet over medium heat, melt butter and cream cheese. Add garlic and whisk until smooth. Add milk gradually. Stir in parmesan and pepper and cook until the cheese is melted and the mixture has thickened.

Zoodle directions:

For zucchini and squash noodles, use a spiralizer to make noodles. In a small skillet, heat olive oil on medium heat. Add noodles and cook until tender (about 7 minutes). Drain noodles using a colander. When you’re ready to serve, place zoodles in a bowl and top with sauce, then top with chicken.
