Turkey Sausage & Sweet Potato Skillet
Prep Time: 17 mins | Cook Time: 20 mins | Total Time: 37 mins
Ingredients:
6 strips Bacon (diced)
1 tbsp Reserved Bacon Grease
1 tbsp Butter
2 Medium Sweet Potatoes (thinly sliced)
1 bag Broccoli Florets (frozen)
3 Medium Carrots (thinly sliced)
1 Medium Onion (chopped)
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 & 1/8 tsp White Pepper
1/4 tsp Garlic Powder
2 14-oz Packages of Pre-Cooked Smoked Turkey Sausage (sliced diagonally)
4-oz Grated Cheese (any kind)
Preparation notes:
Place the chopped bacon pieces in a large saute pan or skillet on medium-high heat. Cook the bacon, stirring occasionally, until crisp. Using a slotted spoon, remove the bacon pieces to a stack of paper towels to drain. Discard all but one tablespoon of the bacon grease. Return that tablespoon of grease to the pan and add the tablespoon of butter.
Reduce the heat to medium, and when the butter is melted, add the potatoes, carrots, and onions. Stir to coat the ingredients and cover the pan. Cook for 5 minutes, stirring every 2-3 minutes. Add frozen broccoli, salt, pepper, garlic, onion powder, and white pepper, then cook another 5-10 minutes.
Add the sliced sausage and stir to combine. Replace the lid and cook for an additional 10 minutes, stirring every few minutes. Sprinkle the bacon pieces and cheese over the top and serve.
