Homemade Marinara

Prep Time: 10 mins | Cook Time: 2 hrs | Total Time: 2 hrs 10 mins

Ingredients:

  • 1/4 cup Extra Virgin Olive Oil

  • 3 Small Onions (finely chopped)

  • 3 tsp Minced Garlic

  • 3 Carrots (finely chopped)

  • 3 Celery Stalks (finely chopped)

  • 1 1/2 tsp Salt

  • 1 1/2 Black Pepper

  • 12-oz can Crushed Tomatoes

  • 3 Dried Bay Leaves

  • 2 tbsp Dried Basil

  • 3 tbsp Sugar

  • 1/4 tsp Red Pepper Flakes

Preparation notes:

Heat the oil in a large pot over medium-high heat. Add the onions and garlic and saute until onions are translucent (about 10 mins).

Add the celery, carrots, and salt and pepper. Saute until all veggies are soft (about 10 mins).

Add crushed tomatoes, bay leaves, basil, red pepper, sugar and simmer uncovered over low heat until the sauce thickens and veggies are tender (about 1-2 hour).

Remove and discard bay leaves. Season with more salt, pepper, and sugar to taste.

Eat immediately or divide into quart size baggies once cooled and freeze.
