Healthy Chocolate Peanut Butter Oatmeal Bars
When I’m in need of a sweet treat, but want to keep it healthy I always gravitate towards this recipe because it’s SO easy, SO good, and lasts in the fridge for a long time so I can just take one out when I feel the sweet tooth urge comin’ on! These are soft, sweet, and have a little bit of a crunch from the hardened chocolate on top. Here’s how you make them…
Serves: 16 Prep Time: 5 mins | Total Time: 5 mins
Ingredients:
1 cup Peanut Butter
3 tbsp Coconut Oil
2 1/4 cups Quick Oats
1 dash Salt
3 squares Baking Chocolate or 3/4 cup Chocolate Chips
Preparation notes:
Butter an 8×8 baking dish.
Mix peanut butter and coconut oil in large microwave safe bowl until melted (about a minute). Add oats and salt and stir well.
Press Into baking dish flattening with back of spoon.
In another bowl melt the chocolate and then spread over the top. Cover and refrigerate then cut into squares.
Can store in fridge 7-10 days.
