“The Fix” Carrot Cake Loaves

Ingredients:

  • 4 1/2 Shredded Carrots

  • 1 1/2 cups Old Fashioned Oats

  • 8 Eggs

  • 2 tsp Vanilla Extract

  • 1 stick Cinnamon

  • 1 tbsp Baking Powder

  • 1/2 tsp Apple Pie Spice

  • 1/2 cup Maple Syrup

Preparation notes:

Preheat oven to 375 degree. Combine all dry ingredients in a large bowl and mix well. Divide the batter amongst 4 small loaf pans OR 12 individual muffin cups that have been sprayed with non stick spray.

Cook for approximately 20-30 min until the top of the loaf (or muffin) is firm to the touch.

I like to top mine with a little peanut butter on top when I’m ready to eat (just add an extra tsp count if following the container system)

Can store in fridge up to a week or freeze for up to a month.

Cool before serving. Enjoy!
