Peanut Butter Oatmeal Squares
A treat that is both healthy and delicious is always a winner in my book and these little squares just do not disappoint! They make the perfect breakfast or dessert! They have a little bit of crunch, not too much sweetness, and just the right amount of tartness to be simply perfect! You can even freeze them individually and take them out one at a time when you’re ready to eat them!
Serves: 9 Prep Time: 15 mins | Cook Time: 30 mins | Total Time: 45 mins
Ingredients:
2 cups Old Fashioned Oats
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1/4 cup Raw Peanuts
1 1/2 cups Unsweetened Almond Milk
1 Large Ripe Banana
1 tsp Vanilla
1 tbsp Ground Flaxseed
2 tbsp Peanut Butter
1/4 cup maple syrup
Optional:
2 tsp Brewer’s Yeast (if breastfeeding, this helps increase supply)
Preparation notes:
Preheat oven to 375. Line an 8 x 8 pan with parchment paper and lightly coat with cooking spray. Set aside.
In a blender, add oats, baking powder, cinnamon, salt, and nuts, and pulse 2-3 times just to chop up the nuts. Transfer the mixture to a large bowl and set aside.
In the same empty blender, add almond milk, banana, vanilla, flaxseed, peanut butter, and syrup. Blend until smooth. Add milk mixture to oat mixture and stir until well blended.
Pour batter into prepared pan and smooth top with a spatula.
Bake 30-35 minutes or until top is golden brown.
Cool completely. Cut into 9 squares.

Side Notes:
If breastfeeding, add 2 tsp of brewers yeast to help increase milk supply.
These squares can be wrapped individually in plastic wrap and stored in the freezer until ready to eat. Once ready to eat, thaw and microwave for 20 seconds
These are delicious topped with butter or peanut butter!
