Whole Wheat Bran Muffins

Ingredients:

  • 1 1/4 cups Wheat Bran

  • 1 cup Buttermilk

  • 1 tsp Vanilla Extract

  • 1 tbsp Water

  • 1 Egg

  • 1/4 cup Coconut Oil (melted)

  • 1 cup Whole Wheat Flour

  • 1/4 cup Truvia

  • 1/4 cup Sugar

  • 2 1/2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • Cinnamon Sugar for sprinkling

Preparation notes:

In a mixing bowl, combine wheat bran and buttermilk. Let it stand for 5 minutes. Add vanilla, water, egg, and coconut oil. Stir until combined.

Stir in flour, truvia, sugar, baking powder, baking soda, and salt only until combined. Spoon into 12 muffin tins. Sprinkle with cinnamon sugar.

Bake at 400 degrees for 15-20 minutes or until the muffin springs back when lightly pressed.

Cool completely on a wire rack.

Freezing Notes:

If you plan to freeze these, I recommend putting about 4 at a time in a quart-size Ziplock baggie, getting as much air out as possible, then freezing them. They should last a few months in the freezer.
