Mom’s Potato Soup
Is there anything better than soup made by your mama? I really don’t think so! My mom makes some of the best soups and I wanted to share with you her recipe for potato soup today. She is in town visiting us this week, helping me organize baby clothes, clean, and she’s even cooking for us! Yes, she’s a pure gem, I know! After working several hours at Starbucks today, I came home to the amazing aroma of my mom’s potato soup. My house just smelled like love! Maybe that’s the pregnancy hormones talking, I don’t know, but it was heavenly, and it tasted even better. Here’s the recipe for you.
Serves: 6 Prep Time: 20 mins | Cook Time: 45 mins | Total Time: 1 hr 5 mins
Ingredients:
2 cartons Chicken Broth
4 cups Russet Potatoes (cubed)
1 cup Carrots (peeled and diced)
1 Onion (diced)
1 cup Milk
1 stick Butter
1/4 tsp Garlic Powder
Salt and Pepper (to taste)
1/2 cup Light Sour Cream
1 cup Cheese (shredded)
Optional Garnishes:
Bacon
Shredded Cheese
Green Onions
Preparation notes:
Boil potatoes, carrots, and onions in chicken broth until tender.
Add the milk, butter, garlic, salt, and pepper, and heat.
Add sour cream and cheese and stir until cheese is melted.
Soup may be thickened with a mixture of 2 tsp flour and 1/2 cup water if needed. Garnish with crumbled bacon, chopped green onions, and shredded cheese
