Healthy Chocolate Chip Cookies

I totally get it if you’re weirded out by the fact that I’m posting healthy recipes on December 19th. I mean, isn’t this the time of year to indulge? Well yes, definitely! I’m all for indulging! Just ask my almost 9 month preggo belly! BUT, I’m also not trying to gain 10 lbs over Christmas either, so I find, if I have a healthier option on the counter I’m more likely to go for that than the sugar cookies I made for my son’s class party. I’ll in turn, feel better mentally and physically knowing I made a better choice. Plus, these cookies are so darn good you really don’t even feel like you’re missing out on anything! I’ve even taken them to multiple parties and they always get devoured and people are shocked to find out they’re actually pretty good for you! WIN WIN! So trust me when I say, you need to at least give them a try! The original recipe I got from the AMAZING Fixate cookbook which I love. I’ve done a little tweaking to it and I think you guys will love them!

Serves: 26 Prep Time: 20 mins | Cook Time: 14 mins | Total Time: 34 mins

Ingredients:

  • 3 cups Almond Flour

  • 1 tsp Baking Soda

  • 1/4 tsp Himalayan Salt

  • 1/2 cup Coconut Oil

  • 1/2 cup Pure Maple Syrup

  • 1 Egg

  • 2 Egg Whites

  • 1 tsp Pure Vanilla Extract

  • 1/2 cup Chocolate Chips

Preparation notes:

Preheat oven to 375 and line two baking sheets with parchment paper (these will stick, so this is an important step).

Combine almond flour, baking soda, and salt in a medium bowl. Set aside.

In an electric mixer mix oil and maple syrup until creamy, approximately 3-4 minutes. Add egg, egg whites, and extract; beat for an additional 2 minutes. Add almond flour mixture to egg mixture and mix until blended. Add chocolate chips; mix until just blended.

Drop by rounded TBSP onto baking sheets. Flatten cookie with a spatula (or your fingers). Bake for 12-14 minutes until lightly golden.

Cool before serving. Enjoy!
