Pumpkin Cream Cheese Cupcakes
Ingredients:
For Batter
1 15-oz can Pumpkin
2 cups Sugar
4 Eggs
3/4 cup Avocado Oil
1 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Cinnamon
1/2 tsp Pumpkin Spice
2 cups All Purpose Flour
For Cream Cheese Topping:
8-oz Cream Cheese
1 cup Milk Chocolate Chips
1/3 Cup Sugar
1 Egg
Preparation notes:
Preheat oven to 350 degrees and prepare cupcake pans with liners.
In a large bowl, beat all batter ingredients well with stand mixer. Fill cupcake liners 3/4 of the way full.
Divide the batter equally between pans.
Beat sugar, eggs, and cream cheese well. Fold in chocolate chips. Put on heaping teaspoon of the mixture in the middle of each cupcake.
Bake at 350 for 20-25 minutes.
Cool before serving. Enjoy!
