Vanilla Chia Seed Pudding

I know, I know, “chia seeds, that’s weird food!” I get it, I used to say the same thing, but that was before I really gave chia seeds a chance. I didn’t know a seed could taste this good! I’ve been having this pudding as a little before bed treat at night and I’m loving it! This chia seed pudding really does taste like a tapioca pudding and it’s so filling! It’s also so versatile because you can add whatever toppings you like to it (cocoa powder, chocolate chips, fresh fruit, peanut butter, coconut, nuts, dried fruit, the possibilities are endless! And the best part? It’s SOOO easy and quick to make!

Ingredients:

  • 3/4 cup Unsweetened Almond Milk

  • 1 tbsp Maple Syrup

  • 1 tsp Vanilla Extract

  • 4 tbsp Chia Seeds

Preparation notes:

In a small mason jar mix the almond milk, maple syrup, vanilla extract, and chia seeds (I prefer the white ones. You can find them on amazon here).

Mix well with a fork and put in fridge overnight.

Add toppings and enjoy!

It will last in fridge up to a week. See, told ya it was easy!
